This peanut butter fudge is rich, smooth, and simple — the kind that sets up just right and disappears quickly once it’s cut. It’s a favorite for holidays and sharing, but easy enough to make whenever a sweet treat is needed.
Ingredients
- 3 cups powdered sugar
- ½ cup unsalted butter
- 2 cups light brown sugar
- 5 ounces half & half
- 1 cup creamy peanut butter
- 2 teaspoons vanilla extract
Instructions
Prepare an 8×8-inch baking pan by lightly greasing it, then lining it with parchment paper. Set aside.
Place the powdered sugar in a large mixing bowl and keep nearby.
In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar and half & half, mixing until smooth. Bring the mixture to a boil, then allow it to boil briefly before removing it from the heat.
Once off the heat, stir in the peanut butter and vanilla until the mixture is smooth and creamy.
Carefully pour the hot peanut butter mixture over the powdered sugar. Using an electric mixer, beat until fully combined and silky.
Transfer the fudge into the prepared pan and spread evenly with a spatula. Let it cool at room temperature until firm and set before cutting into squares.
